The reservation reality
New York's best-known fine dining restaurants can be booked out weeks or months in advance, and several have moved to release schedules — reservations opening at a specific time (often 9am or 10am) exactly 30, 60, or 90 days ahead of the date, with the best times gone within minutes. Set an alarm and be ready at the exact release time if there's a specific restaurant you want. Resy and OpenTable handle most of the booking; a small number of the most exclusive restaurants still take reservations only by phone.
Waitlists and cancellations
Cancellations happen constantly — checking Resy or OpenTable's notification feature for a fully-booked restaurant can turn up a same-week or even same-day table. Calling directly and asking about a waitlist, particularly for a weeknight, is also worth trying even when the online system shows nothing available.
Dress codes
Fewer New York restaurants enforce a strict jacket-required dress code than a decade ago, but the highest tier still does — check the specific restaurant's website before you go. "Smart casual" (no shorts, no flip-flops, collared shirt for men) covers the large majority of what's now called fine dining in the city.
Tasting menus
Many of the city's top restaurants have moved to a tasting-menu-only format — a fixed multi-course meal at a fixed price, sometimes with a required wine pairing add-on. This isn't optional at these restaurants; check the format before booking if you have a strong preference for ordering à la carte.
Is it worth the price
New York's top restaurants are genuinely among the best in the world, and the experience — service, ingredient quality, technique — reflects the price at the very top tier. The steepest drop-off in value tends to be in the upper-mid tier, where prices approach fine dining without matching the execution. If budget is a real constraint, a well-chosen mid-range restaurant (see our dining customs guide) often delivers more genuine satisfaction per dollar than an ambitious but not-quite-top-tier tasting menu.
